To the eye
A pale, crystalline gold colour, with silvery highlights and a brilliance that speaks of great purity.
Nose
A striking and exceptionally crisp bouquet. It bears Benoît Ente’s signature: a refined reduction (the crackle of a match) that fades to give way to Meyer lemon, vine blossom and flint.
Palate
The attack is lively, almost electric. The palate is crisp and well-defined, with a dense texture yet without any heaviness. It is a ‘laser-like’ wine, where the salty minerality takes precedence over the fruit, offering a sensation of rocky purity.
Pairing
A wine for fine dining. It’s simply magnificent with a scallop carpaccio, line-caught sea bass in a salt crust or lightly seared langoustines.
Aging potential
The 2021 vintage has a structural acidity that promises superb ageing potential. It will reach its peak between 2028 and 2038.
