Discover Bastian Wolber Wines

The Bastian Wolber Domaine, located in Volnay under the label Laisse Tomber, is one of the most remarkable rising stars in the new Burgundy scene. Originally from Germany, Bastian Wolber honed his craft with legendary winemakers such as Jean-Marc Roulot in Meursault and Rudolf Trossen in Moselle before acquiring his own vineyards and developing a high-end trading activity. His philosophy is based on an extremely demanding organic and biodynamic viticulture, with natural vinifications free of additives, resulting in wines of exceptional purity.

Terroir and Characteristics

The vineyards of Bastian Wolber benefit from the prestigious Burgundy terroirs, notably around Volnay and the Côte de Nuits. The limestone and clay-limestone soils, sometimes mixed with rolled pebbles, contribute to a strong mineral character. Organic and biodynamic farming enhances the terroir expression by respecting biodiversity and natural cycles.

Wine Profile

These wines display vibrant energy and remarkable fruit brightness. Whether from Volnay, Gevrey-Chambertin, or more experimental wines from other French regions, Bastian Wolber’s style features a texture of tannins that is both fine and airy, accompanied by freshness, elegant structure, and irresistible drinkability. Often expressing the signature of Pinot Noir, these wines embody purity and free expression of the vineyard.

Food Pairings

Bastian Wolber wines pair wonderfully with delicate dishes such as veal with morels, roast free-range chicken, aged cheeses like Comté, or wild trout. Their finesse and aromatic complexity also elevate game birds or mushroom-based sauces.
