To the eye
A ruby colour of fine intensity, clear and brilliant, with slightly brick-red highlights beginning to appear, reflecting its nine years of ageing.
Nose
A lively, open bouquet with notes of red berries (redcurrant, cherry) and peony. Once aerated, hints of white pepper and a touch of refined undergrowth bring a very elegant, woodland-like quality.
Palate
The attack is fresh and straightforward. On the palate, it offers a ‘vertical’ structure, with fine tannins that have been polished by time. This is a wine brimming with vitality, where the freshness of the 2017 vintage highlights a crisp and savoury texture. It displays the limestone minerality typical of Auxey, which adds depth to the wine as a whole.
Pairing
Perfect with salted pork and lentils, rabbit with Burgundy mustard, or hard cheeses such as a matured Morbier.
Aging potential
The 2017 vintage is characterised by its balance. Whilst it is delicious now, it will be able to maintain this level of maturity for the next 2 to 4 years.
