To the eye
A sumptuous garnet colour with brick-red and mahogany hues, reflecting its noble development and great age.

Nose
A vast array of tertiary aromas, with incredible depth. It exudes scents of garrigue, tapenade, fine leather, blond tobacco and black truffle. The Syrah adds delicate notes of smoked pepper and candied black fruits, creating a deeply moving harmony.

Palate
The palate is masterful. The attack is silky, almost velvety, with tannins that have been completely mellowed by time. The wine coats the palate with stunning elegance, revealing flavours of sweet spices, meat juices and forest floor. The finish, which goes on for miles, is carried by a mentholated and mineral freshness that is astonishing for a wine of its age.

Pairing
A wine for contemplation that demands a meal to match. It will pair divinely with a whole black truffle in puff pastry, hare à la royale, squab with porcini mushrooms or a tournedos Rossini. Handle the bottle with care (store it upright for 24 hours beforehand) and decant it with the utmost delicacy just before serving, so as not to disperse its delicate aromas. Ideal serving temperature: 16°C.

FREQUENTLY ASKED QUESTIONS

Should I wait a little longer before opening this 1996?

With around thirty years of age, this vintage is presented as a testament to the aging potential of the great wines of Languedoc. However, the description gives neither a drinking window nor any additional aging period, so it does not provide grounds for recommending that you wait longer.

Does the IGP designation indicate a less ambitious wine than an AOC?

Not in this case: the IGP designation allows the estate to go beyond AOC blending rules. This freedom has produced a wine described as having extraordinary aromatic complexity and tannic structure; the appellation category alone is therefore not enough to judge its ambition.

Is this a good choice if I enjoy blends rather than varietal wines?

Yes. The appeal of this cuvée lies precisely in its distinctive blend, dominated by Syrah and Mourvèdre, with Cabernet Sauvignon and a touch of Counoise. It is therefore better suited to discovering a blend of grape varieties than to seeking the expression of a single one.

Why take a particular interest in the 1996 vintage?

It is described as exceptional for the region, with climatic conditions that allowed for slow, balanced ripening. This is an important factor when choosing this vintage, although no comparative tasting notes are provided to establish precisely how it measures up against another year from the estate.

What occasion would be suitable for opening this older bottle?

It is well suited to a tasting focused on older wines or the aging potential of Languedoc. The description presents it as a collector's item: its appeal lies as much in its age as in the opportunity to discover this distinctive blend.
