To the eye
A pale gold colour with green highlights, displaying great brilliance. The viscosity in the glass suggests good concentration.
Nose
You can immediately recognise Ramonet’s signature style: a subtle note of fresh hazelnut, which quickly gives way to white flowers (hawthorn), ripe citrus and a hint of flint.
Palate
The attack is clean and vigorous. The mid-palate is characterised by a silky, enveloping texture, typical of the 2022 vintage. The body is rich but is kept in check by a delicate acidity and a limestone minerality that gives the wine length. This is a white wine of depth and precision.
Pairing
It goes down a treat with pan-fried scallops, turbot in cream sauce or Bresse chicken with morel mushrooms.
Aging potential
Serve at 12°C. Decanting for 30 minutes is recommended to allow the toasty notes to subside, giving way to the fruit. In 2026, it is just beginning to open up. It will reach its peak between 2027 and 2032.
