To the eye
A magnificent deep golden colour, verging on old gold, adorned with warm amber hues. The effervescence, mellowed by the years, manifests itself as a fine string of very delicate, lingering bubbles.

Nose
A rich, mature champagne nose. The primary aromas have given way to a symphony of secondary notes: toasted brioche, gingerbread, acacia honey and dried fruits (toasted hazelnut, fig). Once aerated, elegant hints of mocha, beeswax and a very subtle touch of undergrowth add complexity to this magnificent bouquet.

Palate
The attack is full-bodied, vinous and caressing. The bubbles have dissolved to reveal a creamy, almost velvety texture. It reflects the generosity of the 2000 vintage, with flavours of praline, buttery pastries and roasted yellow fruits. The finish is majestic, lingering at length with lovely, noble bitter notes and a hint of chalkiness that maintains the overall freshness.

Pairing
This champagne, aged for over twenty-five years, is a great wine for fine dining. Forget the classic aperitif: it calls for rich, textured dishes. It will be stunning with sweetbreads with morel mushrooms, Bresse chicken in cream sauce, pan-fried foie gras or white truffle risotto. It can also be paired with mature Parmesan or a 36-month-old Comté.
