To the eye
A pale, brilliant yellow colour, with delicate green highlights.
Nose
A delicate bouquet of citrus fruits (lime, grapefruit), enhanced by smoky and buttery notes, with hints of pastry and tobacco.
Palate
Lively and fresh on the palate, with very pronounced acidity that is nevertheless perfectly balanced and integrated – an Aligoté that has regained its former glory.
Pairing
Oysters, prawns, mussels, or as an aperitif with fresh goat’s cheese or a light salad. Serve at 10–11°C.
Aging potential
Thanks to its old vines and careful ageing, this wine has excellent ageing potential of 5 to 8 years, going beyond the simple youthful freshness typically associated with the appellation.
