To the eye
The colour is a deep garnet with subtle brick-red highlights, indicating that it has developed beautifully in the bottle whilst retaining its intensity.

Nose
The nose is complex and refined, revealing aromas of blackcurrant, blackberry and black cherry, intermingled with notes of cedar, tobacco, leather, forest floor, liquorice, graphite and roasted notes imparted by the ageing process.

Palate
On the palate, it is full-bodied, well-structured and harmonious. The tannins, now perfectly integrated, underpin a generous body in which ripe black fruits blend with notes of spice, cedar and cocoa. The finish is long, elegant and persistent, characteristic of the great Pauillac wines from the remarkable 2000 vintage.

Pairing
This Château Fonbadet 2000 is the perfect accompaniment to a grilled rib of beef, a fillet of beef with porcini mushrooms, a roast leg of lamb or game in sauce. It is also perfect with a tournedos served with truffle butter or mature cheeses such as an aged Comté or a Salers. To bring out its full complexity, we recommend serving it at between 17 and 18 °C after decanting for around an hour.

Aging potential
Produced from an exceptional vintage, this Château Fonbadet 2000 has now reached full maturity. A bottle stored in the right conditions will continue to develop favourably for a further 5 to 10 years, whilst developing greater aromatic complexity.
