To the eye
The colour is a deep garnet with subtle brick-red highlights, showing fine development whilst retaining a lovely brilliance.

Nose
The nose is delicate and complex, revealing aromas of blackcurrant, redcurrant and black cherry, which develop into notes of cedar, blond tobacco, leather, forest floor, graphite and sweet spices – typical of great Saint-Estèphe wines that have reached maturity.

Palate
On the palate, it is full-bodied, harmonious and perfectly integrated. The tannins are silky whilst retaining a lovely structure, giving way to flavours of ripe black fruit, liquorice, cedar and roasted notes. The finish is long, elegant and lingering, with a freshness that is the hallmark of the great terroirs of Saint-Estèphe.

Pairing
This 1998 Château Ormes de Pez is the perfect accompaniment to a grilled rib of beef, a fillet of beef with porcini mushrooms, a roast rack of lamb or a venison stew. It will also pair well with poultry with morels, duck confit or mature cheeses such as aged Comté or Salers. To fully appreciate its aromatic complexity, we recommend serving it at between 17 and 18 °C after decanting for around an hour.

Aging potential
Now at the peak of its maturity, this 1998 Château Ormes de Pez offers a remarkable tasting experience. A bottle stored in excellent conditions will continue to develop favourably for a further 5 to 8 years, developing ever more complex tertiary aromas.
