To the eye
The colour is a brilliant golden yellow with golden highlights; it is luminous and crystal-clear, hinting at a wine of great concentration.

Nose
The nose is remarkably complex, revealing aromas of candied apricot, mango, pineapple, quince, orange peel, exotic fruits and honey, complemented by notes of beeswax, dried fruit, mild spices, dried flowers and a delicate smoky hint characteristic of the estate.

Palate
On the palate, it is full-bodied, intense and exceptionally precise. The sweetness is perfectly balanced by a vibrant acidity that brings freshness and length. Flavours of candied fruit, citrus, dates, quince paste and spices linger on a seemingly endless finish, which is briny and of incredible purity – the hallmark of Louis-Benjamin Dagueneau’s finest wines.

Pairing
Les Jardins de Babylone Demi-Sec 2021 is a wonderful accompaniment to pan-fried or semi-cured foie gras, a duck pastilla with dried fruit, a lightly spiced lobster, poultry with morel mushrooms, or a sweet-and-savoury tagine. This fine wine will also bring out the best in blue-veined cheeses such as Roquefort or Bleu des Causses, as well as lightly sweetened desserts made with apricot or peach. To fully appreciate its complexity, we recommend serving it at between 10 and 12 °C after allowing it to breathe for around an hour.

Aging potential
Produced from an exceptional terroir and a remarkable vintage, Les Jardins de Babylone Demi-Sec 2021 has an ageing potential of 20 to 30 years, or even longer. Over time, it will develop aromas of saffron, white truffle, dried fruit, honey and oriental spices, whilst retaining exceptional freshness.
