To the eye
A deep colour, an intense garnet red. Having matured for nearly two decades, the wine displays superb brick-red and mahogany hues, indicative of its maturity.

Nose
Powerful, deep and distinctly tertiary. The jammy black fruits (blackberry, black cherry) typical of the 2005 vintage are still present, but they now blend into a complex bouquet of fine leather, game, dark tobacco, undergrowth and truffle. A few notes of liquorice and bitter cocoa round the wine off perfectly.

Palate
The attack is dense and full-bodied. The wine has perfectly integrated the massive structure of its vintage: the tannins, once fiery, are now beautifully integrated and rounded, offering a velvety mouthfeel. The body remains imposing, underpinned by well-preserved acidity that extends the finish with long, earthy and spicy notes.

Pairing
With its full-bodied character and complex aromas, this Marsannay calls for dishes with real character. It will be at its best with a slow-cooked beef bourguignon, a hare stew, duck breast with cherries, or a fine cut of beef grilled over vine shoots. When it comes to cheese, be bold and try soft, washed-rind cheeses with a strong character, such as an Époisses or a matured Langres. Open the bottle and let it breathe for 1 to 2 hours before serving, at around 16°C.
