To the eye
A deep golden colour, with bright amber highlights, reflecting controlled ageing.
Nose
A complex bouquet in which the fresh fruit has given way to notes of brown butter, acacia honey, white truffle and dried fruit (toasted almond). A hint of candied orange zest lingers.
Palate
The attack is smooth. The wine has gained in body and richness. The original mineral edge is still present, but it has now mellowed, acting as a salty thread running through the wine. The finish is lingering, with notes of smoke and toast.
Pairing
A young hen with morel mushrooms, braised sweetbreads, or a 24-month-old Comté.
Aging potential
This wine is at its peak. It can remain at this stage of maturity for a further 3 to 5 years in an ideal cellar.
