To the eye
A pale, crystalline gold colour, with silvery highlights that hint at great freshness.
Nose
A striking and remarkably crisp bouquet. It bears Thierry Pillot’s signature: a refined, toasty reduction that gives way to lemon zest, Granny Smith apple and notes of hedge flowers. A hint of salt and chalk rounds off this lively nose.
Palate
The attack is lively and crisp. On the palate, it is straightforward, driven by a ‘laser-like’ tension typical of the grape variety, yet with a surprising fullness of body for an Aligoté. This is a vibrant wine, where the acidity is perfectly integrated into a silky texture. You can sense the limestone minerality that gives the wine its length.
Pairing
First and foremost, a wine to accompany fine dining. Superb with oysters, a lime-flavoured scallop carpaccio, or artisanal parsley-crusted ham.
Aging potential
In 2026, this 2020 vintage will be at its peak. Thanks to its excellent acidity, it will continue to age beautifully over the next 3 to 5 years.
