A pale, crystalline yellow colour with silvery highlights.

The nose is immediately clean and vibrant, with notes of fresh citrus (lemon, yuzu), crisp pear and white flowers, along with a chalky, mouth-watering hint. As it opens up, notes of candied lemon zest, dried herbal tea and flint emerge.

A taut, vibrant palate with a sharp minerality. The attack is direct, the palate slender, carried by perfectly integrated acidity and great aromatic precision. The finish, salty and finely chiselled, leaves a sensation of remarkable purity.

Fish, poultry in a creamy sauce, fresh goat’s cheese. Serve at 11–12°C, decanted into a carafe one hour before serving.
