To the eye
A deep golden colour with bronze highlights, and extremely fine, persistent bubbles.
Nose
A rich, vinous bouquet. It reveals notes of Burlat cherry and dried apricot, followed by hints of toasted brioche, wildflower honey and smoky chalk.
Palate
The attack is rich and well-structured, typical of the noble wines of Aÿ. The texture is full-bodied, almost creamy, yet underpinned by a crisp acidity that gives the wine length. The finish is briny and long, with notes of nuts and sweet spices.
Pairing
A superb champagne for fine dining. Ideal with pan-fried veal sweetbreads, free-range poultry in cream sauce or blue lobster with lightly salted butter.
Aging potential
At his peak in 2026, he has the potential to develop superbly right through to 2035–2040.
