Discover Pauillac

The Pauillac appellation, located in the heart of the Médoc on the left bank of the Gironde estuary, is one of the most prestigious in Bordeaux. It hosts some of the world’s greatest wines, including three of the five Premiers Grands Crus Classés from the 1855 classification: Château Lafite Rothschild, Château Latour, and Château Mouton Rothschild. Pauillac embodies the power, structure, and nobility of great Médoc wines.

Terroir and Characteristics

The unique terroir of Pauillac is based on perfectly drained gravelly slopes ideal for growing Cabernet Sauvignon, the region's dominant grape variety. It is typically blended with Merlot, Cabernet Franc, and occasionally a touch of Petit Verdot, adding roundness and complexity. This gravelly soil, along with a temperate oceanic climate, gives the wines a rare combination of strength, elegance, and aromatic intensity.

Wine Profile

Pauillac wines are distinguished by their deep, dark color and intense aromas of blackcurrant, blackberry, cedar, tobacco, truffle, and graphite. On the palate, they offer a powerful tannic structure, great depth, and exceptional length. With aging potential often spanning several decades, these wines develop complex and refined tertiary aromas over time.

Food Pairings

These powerful and elegant wines pair wonderfully with grilled red meats, game such as venison, slow-cooked beef or lamb dishes, and matured cheeses like Comté or Beaufort.
