To the eye
An orange-yellow colour, slightly cloudy (unfiltered), with deep golden highlights.
Nose
An exuberant, wild bouquet. It features notes of elderflower, dried apricot, bergamot tea and a hint of pine resin. It has a very clean, aromatic nose.
Palate
The attack is lively. The palate is textured, almost tactile, thanks to the maceration. There is a lovely, noble bitterness on the mid-palate, reminiscent of orange peel. The finish is dry, briny and very long-lasting.
Pairing
Asian fusion cuisine (tempura), matured hard cheeses, or spicy dishes made with yellow curry.
Aging potential
Best enjoyed now for its ‘rock ’n’ roll’ vibrancy. However, it will improve with age over the next 3 to 5 years.
