To the eye
A deep, brilliant golden-yellow colour with amber highlights and great clarity.
Nose
An intense and complex nose revealing aromas of walnuts, toasted hazelnuts, almonds, very ripe apple, dried fruit, candied fruit, curry, turmeric, cinnamon, nutmeg and saffron, with a subtle hint of forest floor and lovely minerality.
Palate
The attack is full-bodied, powerful and perfectly crisp. On the palate, it offers superb structure, a generous texture and incredible aromatic persistence. Notes of nuts, spices, dried fruit and candied apple linger on a complex, briny finish of exceptional length.
Pairing
Bresse chicken with morel mushrooms and vin jaune; Coq au vin jaune; Lobster or rock lobster; Pan-fried foie gras; Matured Comté (24 to 48 months); Mature Parmesan; Asian cuisine with mild spices. Serve at between 14 and 16°C; feel free to open the bottle an hour before serving.
Aging potential
A wine with exceptional ageing potential. This 2000 vintage has now reached maturity but will continue to develop for a further 20 to 40 years, or even longer, if stored under excellent conditions.
