To the eye
A perfectly crystalline, clear and brilliant colour. The wine flows beautifully, leaving fine tears on the sides of the glass – a sign of a fine concentration of fruit essential oils.

Nose
An immediate burst of aroma. It feels as though you’ve plunged your nose into a basket of ripe pears. It’s fresh and light, with notes of juicy fruit flesh, a hint of zest and a very subtle floral nuance (pear blossom). There’s no harsh alcohol burn to mask the fruit.

Palate
The attack is silky and exceptionally smooth. The texture is almost velvety, coating the palate with flavours of sweet, juicy pear. The mid-palate is well-balanced, striking a harmony between the richness of the fruit and the purity of the distillation. The finish is long and lingering, leaving an impression of minty freshness and pure fruit.

Pairing
Classic: As a digestif, served in a ‘tulip’ glass or a small frosted glass to concentrate the aromas. Fine dining: Wonderful with pear sorbet, Bresse blue cheese (for the sweet-and-savoury contrast) or a Bourdaloue tart. Cocktail: As a base for a reimagined ‘French Mule’ made with a high-quality ginger beer.

Aging potential
Like most high-quality white spirits, it has an indefinite shelf life. It does not necessarily improve in the bottle (as it no longer matures in oak), but nor does it deteriorate if stored away from light and kept upright.

FREQUENTLY ASKED QUESTIONS

Is this a good choice if I’m looking for the taste of fresh pear rather than candied fruit?

Yes: the stated profile aims to evoke biting into a Williams pear. It’s therefore a good fit if you prefer a direct expression of the fruit over candied notes.

Do pears harvested at full ripeness make a sweet eau-de-vie?

The mention of natural sugars refers to the fruit at the time of harvest, not to the sweetness of the finished product. It therefore doesn’t mean that this eau-de-vie is sweet or similar to a liqueur.

Could this Williams pear eau-de-vie seem harsh on the palate?

The description highlights an effort to express the fruit without the harshness often associated with clear spirits. This indicates an intended style, but doesn’t guarantee that you won’t feel the warmth of the alcohol.

Why does selecting the heart cut matter when appreciating this eau-de-vie?

The heart cut is described as the finest and most aromatic part of the distillation. Here, its selection serves a specific purpose: letting the pear express itself rather than making the strength of the alcohol the first thing you notice when tasting.

What kind of introductory tasting is SAB’S “La Poire” suited to?

It lends itself to a tasting focused on how faithfully a fruit is expressed in an eau-de-vie. The guiding theme will be the fidelity to Williams pear and the impression of biting into the fruit described in the product details.
