To the eye
A deep amber colour, with coppery and golden highlights, and great brilliance. The texture is visually rich, with thick legs that trail down the sides of the glass.

Nose
A rich and complex bouquet. It features notes of candied fruit (apricot, quince) and wildflower honey, complemented by hints of raisins. The ageing process brings out nuances of nuts (toasted almond) and a hint of mild spices (cinnamon).

Palate
The initial taste is smooth and velvety. The palate is enveloped by an intense fruity sweetness, but this is immediately balanced by the structure of the brandy. Notes of ripe grapes, light caramel and a subtle hint of rancio come through. The finish is long, warm and surprisingly fresh, leaving no cloying sensation on the palate.

Pairing
Aperitif: Serve chilled (8–10°C), neat or with a splash of soda water to stretch it. Food pairing: It pairs perfectly with pan-fried foie gras or a Cavaillon melon. It also pairs beautifully with blue-veined cheeses (Roquefort, Bleu d’Auvergne). Dessert: Perfect with a tarte Tatin, a walnut-based dessert or a dessert made with dark, bitter chocolate.

Aging potential
It is very stable thanks to its alcohol content. It can be stored in a cellar for 10 to 15 years without any problems. Once the bottle has been opened, it will keep for several months in the fridge without losing its aromatic qualities.
