Tasting

To the eye
A deep amber colour, with coppery and golden highlights, and great brilliance. The texture is visually rich, with thick legs that trail down the sides of the glass.

Nose
A rich and complex bouquet. It features notes of candied fruit (apricot, quince) and wildflower honey, complemented by hints of raisins. The ageing process brings out nuances of nuts (toasted almond) and a hint of mild spices (cinnamon).

Palate
The initial taste is smooth and velvety. The palate is enveloped by an intense fruity sweetness, but this is immediately balanced by the structure of the brandy. Notes of ripe grapes, light caramel and a subtle hint of rancio come through. The finish is long, warm and surprisingly fresh, leaving no cloying sensation on the palate.

Pairing
Aperitif: Serve chilled (8–10°C), neat or with a splash of soda water to stretch it. Food pairing: It pairs perfectly with pan-fried foie gras or a Cavaillon melon. It also pairs beautifully with blue-veined cheeses (Roquefort, Bleu d’Auvergne). Dessert: Perfect with a tarte Tatin, a walnut-based dessert or a dessert made with dark, bitter chocolate.

Aging potential
It is very stable thanks to its alcohol content. It can be stored in a cellar for 10 to 15 years without any problems. Once the bottle has been opened, it will keep for several months in the fridge without losing its aromatic qualities.

FREQUENTLY ASKED QUESTIONS

What should I choose between this ratafia and an apricot or mirabelle liqueur?

Choose this ratafia if you’d like to explore grape aromas rather than those of a stone fruit. Its production preserves the must’s natural sugars and original aromas, with the finesse characteristic of the Sab’s version.

Does its sweetness come from the grapes or from added sugar?

The sweetness described comes from the grapes’ natural sugars: the addition of grape spirit stops fermentation before they are fully converted into alcohol. It should therefore be approached as a fortified wine that retains the richness of the fruit, rather than as a dry wine.

Should I expect the strength of a spirit?

Its stated alcohol content is around 17 to 18%: this is not a pure spirit, but grape must whose fermentation has been stopped by adding alcohol. To appreciate its balance, the fruit’s sweetness matters just as much as the alcohol.

How does aging contribute to this ratafia’s balance?

The description highlights careful aging that helps prevent excessive sweetness. Its appeal therefore lies in the finesse of the overall profile, without assuming oaky notes or other aging aromas that are not specified.

What should I look for when comparing it with another ratafia?

For this Sab’s version, the stated distinguishing features are great finesse and a balance that avoids heaviness despite the retained sugars. These are useful criteria for comparing how they feel on the palate, rather than relying solely on sweetness or alcohol content.
